Created through a collaboration between Pavoni and Chef Gianluca Fusto, this perforated cake band is designed to streamline prep while producing pastry shells with sharp, uniform sides and a beautifully even bake.

The micro-perforations help your dough grip the ring during baking, supporting the walls so they hold their shape. Grease the ring before it touches the dough and it releases cleanly as the bake finishes—leaving you with neat edges that look straight out of a pastry case.
