Because it’s encapsulated in a non-reactive fat coating, it’s designed to stay put during storage and handling, then deliver that sour pop as your candy is eaten rather than triggering unwanted reactions in your batch.

Usage Tips
For gummies: Mix the encapsulated malic acid directly with sanding sugar, then coat your finished gummies.
For hard candy: Sprinkle onto candy while it’s still warm. Mixing into sugar for hard candy isn’t recommended, as it can soften the finished candy through sugar inversion.
For cocktail rims: Blend with sugar or salt to dial in a smoother, more controlled sour experience.
Important Note
Before sanding, be sure your finished product has a water activity of 0.55 or below to help prevent weeping.
