In doughs and batters, soy lecithin helps create a more even texture and can support elasticity for a lighter, chewier bite. A common kitchen guideline is to mix 2–3 teaspoons into the fat or oil for every 3 cups of flour, then proceed with your recipe as usual.
Candy makers love it for keeping caramel popcorn creamy and evenly coated while reducing clumps. It can also help reduce oily residue on toffees and caramels, which means a cleaner finish and a nicer bite.
For chocolate work, lecithin can be a cost-conscious alternative to cocoa butter to adjust flow when you want a smoother, more fluid result.
